電飯煲黑椒紅燒肉:
材料:
腩肉一斤
薑1舊
乾蔥頭8粒
調味料:
紹興酒2湯匙
蠔油1 1/2湯匙
鮑魚汁1 1/2湯匙
冰糖幾粒
黑胡椒1茶匙
處理:
1. 用1湯匙粗鹽乸腩肉2小時。
2. 2小時後,洗淨粗鹽。
3. 煲一煲滾水,烚腩肉3分鐘,去除豬壓味。
4. 反轉烚1分鐘,沖洗乾淨,擎乾水。
5. 薑去皮,切片。
6. 乾蔥頭,切去兩端,去皮,洗淨。
7. 洗淨冰糖。
烹調:
1. 放腩肉、薑、乾蔥頭及冰糖入電飯煲內,加入2湯匙紹興酒、1 1/2湯匙鮑魚汁及1 1/2 湯匙蠔油,加入滾水,蓋過材料面。
2. 用超快煮功能開始煮,腩肉皮反向上。
3. 程序完成,放在碟上。
4. 在鑊中加入1茶匙黑椒,炒一下,將薑、乾蔥頭放入鑊兜炒一下,熄火。
5. 斬好五花腩。
6. 將鑊內的汁淋上腩肉上面,完成。
Pork belly with black pepper with rice cooker:
Ingredients:
Pork belly 1 catty
Ginger 1 No.
Shallots 8 Nos.
Seasonings:
Shaoxing wine 2 tbsp
Oyster sauce 1 1/2 tbsp
Abalone sauce 1 1/2 tbsp
Rock sugar several
cubes
Black pepper 1 tsp
Preparation:
1. Season pork belly with 1 tbsp cooking salt for 2 hours.
2. Rinse pork belly thoroughly then.
3. Boil a pot of water, soak pork belly for 3 minutes to remove unpleasant smells.
4. Flip over pork belly, soak for 1 minute, rinse thoroughly and hang dry.
5. Peel and slice the ginger.
6. Cut both ends of shallots, remove skin, rinse thoroughly.
7. Rinse rock sugars.
Steps:
1. Put pork belly, ginger slices, shallots and rock sugar in rice cooker, together with 2 tbsp Shaoxing wine, 1 1/2 tbsp abalone sauce and 1 1/2 tbsp oyster sauce, add water just cover up the ingredients.
2. Use super~quick cooking mode start to cook pork belly. The skin of belly should be faced up.
3. Steps completed. Put belly on a plate.
4. Fry 1 tsp pepper in wok without oil, then put ginger, shallots fry for 1 minute, turn off fire.
5. Cut belly well.
6. Put the sauce in wok on belly. Serve.
